Fall Detox Salads

It’s Monday, people, and I hear that means it’s time to get back to the weekday routine.  The horror!!!  I know it’s tempting to find comfort in a giant latte or perhaps, some steak tacos during lunch hour.  But after two weekends of Halloween celebrations and an impending Thanksigivukkah smorgasbord, I think we could all do with a little detox, n’est pas?

Sooo juices are VERY trendy right now, but for those of us who have yet to jump on the Vitamix bandwagon, I have an idea: let’s just chew our nutrients and calories the old-fashioned way.  Deal?  How about we take it back to the O.G. of detox meals: the salad.

I must admit I have not always been a “salad person.”  My idea of a good one usually entails a cream-based dressing and some form of bacon.  But over time, my tastes have evolved and I can now appreciate the beauty of a well-crafted plate of green.  We all know the consequences of drinking too much: hangover, eating to much: indigestion, and not sleeping: too many to list; but thankfully, our bodies can be primed to be little cleaning machines.  When given the right fuel, your body starts fixing things that are broke.  (And thank goodness for that!)

Here are a few salads that feature some vitamin-packed ingredients to get your body in gear.  They are all vegetarian but if you need some protein consider adding a wild salmon steak on the side.  Warning: I am not a nutritionist!  Pick the antidote to your poison.  Enjoy your lunch!  Welcome to the week.

If you drank too much….

Fix yourself this kale salad.  Vitamin C and K to flush out toxins, with a hydration boost, iron and anti-oxidant power.

 

Ingredients:

1 bunch of Kale–washed and coarsely chopped

1/2 cucumber–sliced

1/4 cup sliced mushrooms

1/4 cup strawberries

1/4 cup chopped walnuts

Suggested Dressing: Balsamic Vinaigrette

Spinach strawberry salad

If you let your sweet tooth get out of hand…

Reset your palate and pamper your tummy with this mix that features Vitamin C, Beta Carotene and acetic acid (which is supposed to maintain glucose levels steady.)

 

Ingredients:

2 carrots–peeled and chopped

1 head of broccoli, cleaned and roughly chopped

1/2 pint grape tomatoes, sliced

2 tablespoons sunflower seeds

1/4 cup cilantro, minced

1/2 tablespoon apple cider vinegar

juice of 1/2 lemon

salt & pepper to taste

 

If you are feeling sluggish…

Consider this: the apple and avocado in this salad provide caffeine and b-vitamins (brainfood) to get you through the afternoon.

 

Ingredients:

4 cups spinach

1 bunch broccolini or asparagus lightly steamed

1/2  avocado

1/4 cup pumpkin seeds

1 cup green–apple cored and chopped

juice of 1/2 lemon

salt & pepper to taste
